Try this clean & healthy veggie soup that takes minutes to make. I’ll have this for breakfast, lunch or dinner –whenever I feel like I’m lacking energy, have brain fog or overindulged.

INGREDIENTS: 1 small zucchini, chopped 2-3 carrots, peeled & chopped 2-3 sticks of celery, chopped 1 clove of roasted garlic 1/2 tsp - 1 tsp of red pepper flakes 1/2 tsp - 1 tsp of salt 1 and 1 half cubes of Rapunzel Veggie Bouillon 1/2 of a large avocado - or 1 small 1 date 3-4 cups of hot water bit of olive oil Cook veggies in a bit of olive oil until softened. Add red pepper flakes and salt. Bloom spices. While veggies cook, soak date in hot water for a few minutes to make it easy to remove the skin and pit. Add to soup. Let bouillon soak in 2 cups of hot water. Add bouillon water, garlic, and extra water to pot and cook for about 15 minutes. Add avocado. Then blend with an immersion blender. Add micro greens (see below) for even more of a pranic boost. Enjoy! ***Feel free to swap out different kinds of veggies. This is a free-spirit soup!
